Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 2 tsp southwest spice blend (cumin, paprika, chili powder, garlic powder)
  • 3 tbsp fresh lime juice
  • 6 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1 can black beans (15 oz), rinsed
  • 1 avocado, diced
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, lime juice, and spice blend. Add chicken and marinate for at least 30 minutes.
  2. Cook the Chicken: Grill over medium-high heat for 6-7 minutes on each side until cooked through.
  3. Prepare the Veggies: Chop greens, halve cherry tomatoes, dice avocado, and rinse black beans.
  4. Assemble the Salad: Combine greens with corn, black beans, tomatoes, avocado, and cilantro in a large bowl.
  5. Add Chicken & Dressing: Slice grilled chicken and place on top of the salad. Drizzle with additional lime juice or dressing.
  6. Toss & Serve: Gently toss to combine and serve immediately.
