- 2 tbsp extra virgin olive oil
- 2 tsp southwest spice blend (cumin, paprika, chili powder, garlic powder)
- 3 tbsp fresh lime juice
- 6 cups mixed greens (romaine, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1 can black beans (15 oz), rinsed
- 1 avocado, diced
- ¼ cup fresh cilantro, chopped
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lime juice, and spice blend. Add chicken and marinate for at least 30 minutes.
- Cook the Chicken: Grill over medium-high heat for 6-7 minutes on each side until cooked through.
- Prepare the Veggies: Chop greens, halve cherry tomatoes, dice avocado, and rinse black beans.
- Assemble the Salad: Combine greens with corn, black beans, tomatoes, avocado, and cilantro in a large bowl.
- Add Chicken & Dressing: Slice grilled chicken and place on top of the salad. Drizzle with additional lime juice or dressing.
- Toss & Serve: Gently toss to combine and serve immediately.
