  • 4 large russet potatoes (about 2 lbs)
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and poke holes in them with a fork. Bake directly on the oven rack for 45-60 minutes until tender.
  2. Let the potatoes cool slightly, then slice them in half lengthwise and scoop out the insides into a mixing bowl, leaving a quarter-inch rim.
  3. In the bowl, mix the scooped potato flesh with butter, sour cream, half of the cheese, bacon bits, and green onions until creamy.
  4. Spoon the filling back into the potato skins and top with remaining cheese. Bake for an additional 15-20 minutes until heated through and cheese is bubbly.
