Instructions
- Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and poke holes in them with a fork. Bake directly on the oven rack for 45-60 minutes until tender.
- Let the potatoes cool slightly, then slice them in half lengthwise and scoop out the insides into a mixing bowl, leaving a quarter-inch rim.
- In the bowl, mix the scooped potato flesh with butter, sour cream, half of the cheese, bacon bits, and green onions until creamy.
