Ingredients

  • 1 cup full-fat Greek yogurt
  • 4 large eggs
  • 2 tbsp unsalted butter
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tsp dried mint (or fresh if available)
  • Salt and pepper to taste
  • 1 slice sourdough bread (optional)

Instructions

  1. In a serving bowl, mix Greek yogurt with a pinch of salt.
  2. In a saucepan, simmer water and add a splash of vinegar. Crack each egg into the water and poach for 3-4 minutes until whites are set but yolks remain runny.
  3. Melt butter in a small pan over medium heat, stir in red pepper flakes and dried mint until fragrant.
