- 1 cup quinoa
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- ½ cup crumbled feta cheese
- ¼ cup fresh basil, chopped
- ¼ cup fresh parsley, chopped
- ½ cup Greek yogurt
- Juice of 1 lemon
- 1 garlic clove, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until it runs clear. In a pot, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes until fluffy.
- While the quinoa cooks, chop cucumber and halve cherry tomatoes. Slice avocado just before serving.
- In a blender, combine Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper. Blend until smooth.
- Once quinoa has cooled slightly, fluff it with a fork in a large bowl. Add cucumbers, tomatoes, avocado, feta cheese, and herbs. Gently fold in the dressing until well combined.
- Serve immediately or refrigerate for later enjoyment.
