Ingredients

  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • ½ cup Greek yogurt
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until it runs clear. In a pot, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes until fluffy.
  2. While the quinoa cooks, chop cucumber and halve cherry tomatoes. Slice avocado just before serving.
  3. In a blender, combine Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper. Blend until smooth.
  4. Once quinoa has cooled slightly, fluff it with a fork in a large bowl. Add cucumbers, tomatoes, avocado, feta cheese, and herbs. Gently fold in the dressing until well combined.
  5. Serve immediately or refrigerate for later enjoyment.
