Instructions
- Preheat oven to 350°F (175°C). Grease a jelly roll pan and line with parchment paper.
- In a mixing bowl, beat eggs and granulated sugar until pale and fluffy. Gently fold in flour until just combined.
- Pour batter into prepared pan and bake for about 12 minutes until golden. Cool slightly before flipping onto a powdered sugar dusted towel.
- In another bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract; mix well.
- Whip heavy cream until stiff peaks form, then fold gently into the cream cheese mixture.
- Spread the cheesecake filling evenly over the cooled sponge cake and top with sliced strawberries. Carefully roll from one end.
