  • 1 lb steak (sirloin or flank), cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 cup queso blanco (store-bought or homemade)
  • 1 bell pepper (colorful variety), diced
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: Chop the steak, dice the bell pepper and onion, and mince the garlic.
  2. Cook the steak: Heat olive oil in a skillet over medium-high heat. Add steak pieces; cook until browned and desired doneness. Remove from skillet.
  3. Sauté vegetables: In the same skillet, add more oil if needed. Sauté onions until translucent, then add bell peppers and garlic; cook for about 3 minutes.
  4. Combine rice and spices: Stir in cooked jasmine rice with cumin, chili powder, salt, and pepper until evenly coated.
  5. Melt the queso: Pour queso blanco over the rice mixture; stir gently until combined and heated through.
  6. Finish with lime and cilantro: Remove from heat; squeeze lime juice over top and sprinkle with cilantro before serving.
