- 1 cup jasmine rice
- 1 cup queso blanco (store-bought or homemade)
- 1 bell pepper (colorful variety), diced
- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prep your ingredients: Chop the steak, dice the bell pepper and onion, and mince the garlic.
- Cook the steak: Heat olive oil in a skillet over medium-high heat. Add steak pieces; cook until browned and desired doneness. Remove from skillet.
- Sauté vegetables: In the same skillet, add more oil if needed. Sauté onions until translucent, then add bell peppers and garlic; cook for about 3 minutes.
- Combine rice and spices: Stir in cooked jasmine rice with cumin, chili powder, salt, and pepper until evenly coated.
- Melt the queso: Pour queso blanco over the rice mixture; stir gently until combined and heated through.
- Finish with lime and cilantro: Remove from heat; squeeze lime juice over top and sprinkle with cilantro before serving.
