  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup creamy peanut butter
  • 1 cup full-fat coconut milk
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp red curry paste (adjust to taste)
  • Juice of 1 lime
  • 2 tbsp brown sugar
  • Fresh cilantro for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces and place in the slow cooker.
  2. In a bowl, mix peanut butter, coconut milk, soy sauce, red curry paste, lime juice, garlic, and brown sugar until well combined.
  3. Pour the sauce over the chicken and stir gently to coat.
  4. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. Check that the internal temperature reaches 165°F (75°C) before serving.
  6. Garnish with fresh cilantro and serve with jasmine rice or veggies.
