Description

  • 9 no-boil lasagna noodles
  • 1 lb medium shrimp, peeled and deveined
  • 8 oz lump crab meat
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 4 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • ½ cup heavy cream
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a large skillet, heat olive oil and butter over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Add shrimp and crab meat; cook until shrimp turns pink (3-4 minutes). Remove from heat.
  3. In a bowl, mix ricotta cheese, heavy cream, oregano, basil, salt, and pepper until smooth.
  4. In a baking dish, layer: sauce, noodles, seafood mix, spinach, and mozzarella. Repeat layers until all ingredients are used.
  5. Cover with foil; bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown. Let rest before serving.
