  • 200g dark chocolate (70% cocoa)
  • 250g fresh raspberries
  • 300ml heavy cream (chilled)
  • 100g sugar
  • 4 large eggs (room temperature)
  • 100g unsalted butter (softened)
  • 120g all-purpose flour
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. Melt dark chocolate in a heatproof bowl over simmering water or in the microwave until smooth. Set aside to cool.
  3. In a separate bowl, cream softened butter with sugar until fluffy. Add eggs one at a time, mixing well after each addition. Fold in melted chocolate until combined.
  4. In another bowl, whisk together flour and baking powder. Gradually add to the wet ingredients without overmixing.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Cool before transferring onto a wire rack.
  6. For the mousse, whip heavy cream with sugar until soft peaks form, then fold in beaten egg whites and fresh raspberries gently.
  7. Layer the cooled cake with raspberry mousse, drizzle with melted chocolate if desired, and refrigerate until set.
