Instructions
- Preheat oven to 425°F (220°C). Prepare pre-baked pie crust.
- In a bowl, whisk together pumpkin puree, sugar, eggs, heavy cream, vanilla extract, cinnamon, and nutmeg until smooth.
- Pour the filling into the cooled crust and bake for 15 minutes. Reduce temperature to 350°F (175°C) and bake for an additional 30-35 minutes until set.
- While cooling, beat egg whites with cream of tartar until soft peaks form. Gradually add superfine sugar until stiff peaks form.
