Instructions

- In another bowl, mix together pumpkin puree, eggs, and vegetable oil until smooth.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Fill each muffin cup two-thirds full with batter. Add a dollop of cream cheese in the center of each muffin before topping off with more batter.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Allow to cool on wire racks.
