Description

  • 1/2 cup canned pumpkin puree
  • 1/2 cup dried cranberries
  • 1 packet (2 1/4 tsp) active dry yeast
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp salt
  • 3/4 cup warm water (110°F/43°C)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, combine warm water with honey and yeast; let sit for 5-10 minutes until frothy.
  3. In a large bowl, mix flour, salt, pumpkin puree, olive oil, and activated yeast mixture until combined.
  4. Knead dough on a floured surface for about 5-7 minutes until smooth; add flour if sticking.
  5. Gently fold in cranberries and shape dough into a ball.
  6. Place in a greased bowl, cover with cloth, and let rise in a warm spot for about an hour until doubled in size.
  7. Punch down dough and roll into sticks about one inch thick; place on parchment-lined baking sheet.
  8. Bake for 20-25 minutes until golden brown; serve warm.
