  • 3 large Russet or Yukon Gold potatoes (about 1.5 lbs), thinly sliced
  • 2 tbsp unsalted butter (for greasing pie dish)
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 tsp fresh thyme or rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a pie dish with butter.
  2. Thinly slice the potatoes using a mandoline or sharp knife to about 1/8 inch thick.
  3. In a bowl, whisk together the heavy cream with salt, pepper, and fresh herbs.
  4. Layer potato slices in the pie dish, drizzling some cream mixture over each layer and sprinkling with cheese until all ingredients are used.
  5. Cover loosely with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until golden brown.
  6. Let it rest for five minutes before slicing and serving warm.
