Instructions
- Preheat your oven to 375°F (190°C) and grease a pie dish with butter.
- Thinly slice the potatoes using a mandoline or sharp knife to about 1/8 inch thick.
- In a bowl, whisk together the heavy cream with salt, pepper, and fresh herbs.
- Layer potato slices in the pie dish, drizzling some cream mixture over each layer and sprinkling with cheese until all ingredients are used.
- Cover loosely with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until golden brown.
- Let it rest for five minutes before slicing and serving warm.
