- 1 cup quinoa
- 1 medium zucchini
- 1 bell pepper (any color)
- 1 cup cherry tomatoes
- 1 small red onion
- 1/2 cup hummus
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1/4 cup fresh herbs (parsley or basil)
- 1/4 cup crumbled feta cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Rinse quinoa under cold water; combine with 2 cups of water in a saucepan. Bring to boil, then reduce heat, cover, and simmer for about 15 minutes until fluffy.
- Chop zucchini, bell pepper, cherry tomatoes, and red onion into bite-sized pieces.
- Toss chopped veggies in a bowl with olive oil, salt, and pepper until evenly coated. Spread on the baking sheet.
- Roast veggies for 25-30 minutes until golden brown.
- Squeeze fresh lemon juice over warm veggies.
- In serving bowls, layer quinoa, roasted vegetables, dollops of hummus, fresh herbs, and feta if desired.
