Instructions

  1. Peel and chop russet potatoes into even chunks. Place them in a large pot and cover with cold water.
  2. Bring the water to a boil over medium-high heat, then add a generous pinch of salt. Reduce heat to medium-low and cook for 15-20 minutes until fork-tender.
  3. Drain the potatoes in a colander; return them to the pot over low heat for 1-2 minutes to evaporate excess moisture.
