- 2 Earl Grey tea bags
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup heavy cream
- 2 tsp pure vanilla extract
- 1/2 cup powdered sugar (for frosting)
- 2 tbsp milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Steep Earl Grey tea bags in boiling water for about 5 minutes, then allow to cool.
- In a bowl, whisk together cake flour, baking powder, and salt.
- Beat softened butter and sugar in another bowl until light and fluffy (3-5 minutes).
- Add eggs one at a time along with vanilla extract; mix well.
- Alternately add cooled tea and dry ingredients to the butter mixture until just combined.
- Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes before transferring to wire racks.
- For frosting, whip heavy cream until soft peaks form; gradually add powdered sugar and milk until fluffy.
- Assemble by layering cakes with frosting in between and on top.
