Description

  • 2 cups cake flour
  • 2 Earl Grey tea bags
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 tsp pure vanilla extract
  • 1/2 cup powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Steep Earl Grey tea bags in boiling water for about 5 minutes, then allow to cool.
  3. In a bowl, whisk together cake flour, baking powder, and salt.
  4. Beat softened butter and sugar in another bowl until light and fluffy (3-5 minutes).
  5. Add eggs one at a time along with vanilla extract; mix well.
  6. Alternately add cooled tea and dry ingredients to the butter mixture until just combined.
  7. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes before transferring to wire racks.
  9. For frosting, whip heavy cream until soft peaks form; gradually add powdered sugar and milk until fluffy.
  10. Assemble by layering cakes with frosting in between and on top.
