  • 1 lb lean ground beef
  • 8 oz provolone cheese (sliced)
  • 1 cup bell peppers (mixed colors, diced)
  • 1 medium onion (thinly sliced)
  • 1 ½ cups almond flour
  • 2 cups shredded mozzarella cheese
  • 1 tsp garlic powder
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine almond flour and mozzarella cheese until smooth to form the dough.
  3. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers for 5–7 minutes until tender.
  4. Add ground beef to the skillet and season with garlic powder, salt, and pepper. Cook until browned.
  5. Roll out dough into rectangles on parchment paper. Spoon beef mixture and provolone cheese onto each rectangle, then roll up.
  6. Place rolls on a baking sheet lined with parchment paper. Bake for 20–25 minutes until golden brown.
