Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray.
- In a large bowl, whisk together the eggs and milk until frothy.
- Stir in the diced ham, shredded cheese, bell peppers, salt, pepper, and baking powder until well combined.
- Pour the mixture into each muffin cup until they are about three-quarters full.
- Bake for 18-20 minutes or until puffed up and golden. A toothpick should come out clean when inserted.
- Let cool for five minutes before removing from the tin.
