  • 1/4 tsp black pepper
  • 1 tsp baking powder
  • Cooking spray (for greasing muffin tin)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray.
  2. In a large bowl, whisk together the eggs and milk until frothy.
  3. Stir in the diced ham, shredded cheese, bell peppers, salt, pepper, and baking powder until well combined.
  4. Pour the mixture into each muffin cup until they are about three-quarters full.
  5. Bake for 18-20 minutes or until puffed up and golden. A toothpick should come out clean when inserted.
  6. Let cool for five minutes before removing from the tin.
