Instructions
- Cook the orzo in boiling salted water for 8-10 minutes until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.
- In a large bowl, combine the cooled orzo with chopped vegetables, crumbled feta cheese, and parsley.
- Drizzle olive oil and lemon juice over the mixture; season with salt and pepper. Toss gently to combine.
