Experience a refreshing burst of Mediterranean flavors with this Greek Orzo Salad With Feta. Packed with tender orzo, fresh vegetables, and creamy feta, this vibrant dish is perfect for any occasion, from picnics to family gatherings.

Ingredients

Scale
  • 1 cup orzo pasta
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ¾ cup crumbled feta cheese
  • ½ cup pitted Kalamata olives
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the orzo in salted boiling water until al dente (about 8 minutes). Drain and rinse with cold water.
  2. While orzo cooks, prepare the vegetables: dice cucumbers, halve cherry tomatoes, and slice red onion.
  3. In a large bowl, combine cooked orzo, prepared veggies, feta cheese, and olives. Toss gently.
  4. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl. Drizzle over the salad and toss to coat.
  5. Let the salad chill for about 30 minutes before serving to enhance flavors.
