  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 2 medium carrots, sliced thinly
  • 8 oz cremini mushrooms, sliced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, carrots, and mushrooms.
  2. In a shallow bowl, mix flour with salt and pepper. Dredge the chicken pieces in the flour until well-coated.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides (about 4-5 minutes per side). Remove from skillet.
  4. Add chopped onions and minced garlic to the skillet; sauté until translucent (about 3 minutes).
  5. Stir in sliced carrots and mushrooms. Pour in chicken broth while scraping up browned bits from the skillet.
  6. Return the chicken to the skillet and add heavy cream and fresh herbs. Simmer for about 20 minutes until cooked through and sauce thickens.
