- 8 oz cremini mushrooms, sliced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare your ingredients by chopping the onion, garlic, carrots, and mushrooms.
- In a shallow bowl, mix flour with salt and pepper. Dredge the chicken pieces in the flour until well-coated.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides (about 4-5 minutes per side). Remove from skillet.
- Add chopped onions and minced garlic to the skillet; sauté until translucent (about 3 minutes).
- Stir in sliced carrots and mushrooms. Pour in chicken broth while scraping up browned bits from the skillet.
- Return the chicken to the skillet and add heavy cream and fresh herbs. Simmer for about 20 minutes until cooked through and sauce thickens.
