Ingredients

  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, cubed
  • 1 cucumber, sliced
  • ½ cup almonds or pecans, toasted
  • ½ cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey or agave syrup
  • Salt & pepper to taste

Instructions

  1. Rinse mixed greens under cold water and pat dry.
  2. Halve cherry tomatoes and slice cucumber into thin rounds. Cube the avocado.
  3. In a dry skillet over medium heat, toast nuts until golden brown (about 5 minutes).
  4. In a bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until emulsified.
  5. In a large bowl, combine greens, veggies, nuts, and feta cheese. Drizzle with dressing just before serving.
