- 2 tbsp honey (or maple syrup)
- 2 tsp cornstarch
- 2 tsp sesame oil

- ½ cup pure mango juice
- 2 tbsp fresh lime juice

Instructions
- Prepare ingredients by chopping chicken into bite-sized pieces and slicing bell peppers.
- Marinate chicken in a bowl with soy sauce, honey, and cornstarch for 15 minutes.
- Heat sesame oil in a skillet over medium-high heat. Sauté garlic and ginger until fragrant (30 seconds).
- Add marinated chicken to the skillet and cook for 5-7 minutes until golden brown.
- Add bell peppers; stir-fry for an additional 3-4 minutes until tender-crisp.
- Gently fold in diced mango along with mango juice and lime juice; heat through for about a minute.
- Serve immediately over steamed rice or noodles.
