  • 1 ripe mango, diced
  • 1 cup mixed bell peppers, sliced (red, yellow, green)
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, sliced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey (or maple syrup)
  • 2 tsp cornstarch
  • 2 tsp sesame oil
  • 2 green onions, sliced for garnish
  • ½ cup pure mango juice
  • 2 tbsp fresh lime juice
  • Red pepper flakes (optional)

Instructions

  1. Prepare ingredients by chopping chicken into bite-sized pieces and slicing bell peppers.
  2. Marinate chicken in a bowl with soy sauce, honey, and cornstarch for 15 minutes.
  3. Heat sesame oil in a skillet over medium-high heat. Sauté garlic and ginger until fragrant (30 seconds).
  4. Add marinated chicken to the skillet and cook for 5-7 minutes until golden brown.
  5. Add bell peppers; stir-fry for an additional 3-4 minutes until tender-crisp.
  6. Gently fold in diced mango along with mango juice and lime juice; heat through for about a minute.
