  • 4 cloves fresh garlic, minced
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh parsley, chopped
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • For the sauce: 1/2 cup sour cream
  • For the sauce: 2 tsp Dijon mustard

Instructions

  1. Prepare the filling by mixing minced garlic, softened butter, parsley, salt, pepper, and lemon juice in a bowl.
  2. Pound each chicken breast between plastic wrap until about 1/2 inch thick.
  3. Place a tablespoon of filling in the center of each breast, fold sides in, and roll tightly. Secure with toothpicks if necessary.
  4. Set up a breading station: one bowl with seasoned flour, another with beaten eggs, and a third with breadcrumbs. Dredge each chicken roll in flour, dip in egg wash, then coat with breadcrumbs.
  5. Preheat oven to 375°F (190°C). In an oven-safe skillet over medium heat, sear each chicken roll until golden brown (3-4 minutes per side). Transfer to the oven and bake for 20-25 minutes or until juices run clear (internal temperature should reach 165°F/75°C).
