- 1 cup long-grain white rice
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (mixed colors)
- 2 cups low-sodium beef broth
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Cook the Steak: Heat oil in a large skillet over medium-high heat. Season steak and sear each side for 4-5 minutes until browned. Remove from skillet and let rest.
- Sauté Vegetables: In the same skillet, add onions and bell peppers. Sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
- Add Rice: Stir in uncooked rice and beef broth. Bring to a gentle boil, then cover and reduce the heat to low. Simmer for 15-20 minutes until rice absorbs broth.
- Mix in Cheese: Remove from heat and sprinkle cheese on top. Cover until melted (3-5 minutes).
- Slice & Serve: Slice the rested steak against the grain and serve over cheesy rice mixture.
