- 1–2 tbsp prepared horseradish (to taste)

Instructions
- Peel and chop the potatoes into chunks. Place in cold salted water and bring to a boil over medium-high heat.
- While potatoes boil, slice onions and caramelize in melted butter over medium-low heat for about 20-25 minutes until golden brown.
- Drain cooked potatoes and return to pot over low heat. Add caramelized onions, heavy cream, additional butter, salt, and pepper; mash until creamy.
- Gradually stir in horseradish, tasting as you go to achieve desired spice level.
