  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 8 oz fresh burrata cheese
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp balsamic reduction
  • 1/2 cup extra virgin olive oil for frying
  • Salt and pepper to taste

Instructions

  1. Tenderize each chicken breast using a meat mallet until about 1/2 inch thick.
  2. Set up a dredging station: one bowl with seasoned flour, one with beaten eggs, and another with panko breadcrumbs. Coat each chicken breast in flour, then egg, and finally breadcrumbs.
  3. Heat olive oil in a skillet over medium-high heat. Fry chicken for 4-5 minutes per side until golden brown and cooked through.
  4. Remove from skillet and drain on paper towels. Top each piece with burrata while warm to allow melting.
  5. Garnish with basil and drizzle with balsamic reduction before serving.
