- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 8 oz fresh burrata cheese
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp balsamic reduction
- 1/2 cup extra virgin olive oil for frying
- Salt and pepper to taste
Instructions
- Tenderize each chicken breast using a meat mallet until about 1/2 inch thick.
- Set up a dredging station: one bowl with seasoned flour, one with beaten eggs, and another with panko breadcrumbs. Coat each chicken breast in flour, then egg, and finally breadcrumbs.
- Heat olive oil in a skillet over medium-high heat. Fry chicken for 4-5 minutes per side until golden brown and cooked through.
