  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz Philadelphia cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 4 Granny Smith apples, peeled and sliced
  • 1 tsp ground cinnamon
  • ½ cup brown sugar
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan to create the crust.
  3. Beat cream cheese until smooth in a separate bowl. Gradually incorporate sugar, then add eggs one by one. Mix in vanilla extract.
  4. Toss sliced apples with brown sugar and cinnamon in another bowl. Pour half of the cheesecake batter over the crust, layer with spiced apples, then cover with remaining batter.
  5. Bake for 55-60 minutes until edges are set but center is slightly jiggly. Cool completely before refrigerating for several hours or overnight.
